Tofu and pawpaw soup

Notes: Free from wheat, gluten, dairy, lactose Depending on stock used can be yeast-free

Ingredients and instructions:

Ingredients

  • 500g peeled pawpaw
  • 2 tablespoons shallots
  • 2 cloves finely chopped garlic
  • 2 teaspooons olive oil
  • 1 teaspoon sesame oil
  • 2 teaspoons finely de-seeded red chilli, finely chopped
  • 1 stick crushed lemon grass
  • 2 Kaffir lime leave (optional)
  • Juice of 2 limes
  • 2 teaspoons fresh chopped coriander
  • 750ml vegetable stock
  • 200g diced tofu
  • 2 tablespoons coconut milk
Preparation
  • De-seed pawpaw and dice
  • In a pan add olive and sesame oils and sauté the shallots, garlic, ginger and chilli
  • Add lemongrass, lime leaves and lime juice and chopped coriander
  • Simmer for 15 minutes
  • Strain into another pan, add tofu and reheat for 5 minutes
  • Remove from heat and stir in coconut milk
  • Serve and garnish with fresh coriander leaves and strips of red capsicum
